




SPANAKOPITA
This is my version of this greek classic dish . Making it in a whole pie versus individual servings makes it much easier and faster to prepare, but of course you can choose to make it individually if making it for a party as an appetizer .I also substitute part of the feta for tofu making it higher in protein and healthier, but you can choose to add more feta or omit the tofu. My special touch is adding the everything bagel seasoning which can make you even eat rocks hehehehehe.....just my opinion . I hope you can enjoy making my humble version for loved ones ;)

INGREDIENTS
INSTRUCTIONS
8 OZ BLANCHED SPINACH

1 PKG PHYLLO DOUGH
​
8 OZ CRUMBLED TOFU
​
4 OZ CRUMBLED FETA CHEESE
​
3/4 CUP DICED ONION
​
3/4 STICK MELTED BUTTER
​
1 MED. EGG
​
1 TBSP. MINCED GARLIC
​
3/4 TSP PINK HIMALAYAN SALT
​
1/2 TSP. GRATED NUTMEG
​
1/4 CUP EVERYTHING BAGEL SEASONING
FOR A VEGAN OPTION USE :
VEGAN BUTTER SUBSTITUTE
VIOLIFE FETA "CHEESE'
1. CUT AND PREPARE THE INGREDIENTS .

2. IN A MEDIUM HEAT PAN . ADD 3 TBSP. OF THE MELTED BUTTER .
​
3. WHEN THE BUBBLING ADD THE ONIONS AND SAUTE FOR 3-4 MIN.
​
4. ADD THE BLANCHED SPINACH. SAUTE FOR A COUPLE OF MIN.
​
5. ADD THE GARLIC, SALT AND NUTMEG. STIR UNTIL COMBINED.
​
6. ADD THE TOFU.
​
7. ADD THE FETA CHEESE .
​
8. OPEN YOUR PHYLLO DOUGH AND START BRUSHING THE MELTED BUTTER AFTER EACH LAYER UNTIL YOU HAVE FIVE LAYERS OF DOUGH . REPEAT THIS PROCESS FOUR TIMES.

9. PRE-HEAT YOUR OVEN TO 350 DEGREES FAHRENHEIT .
​
10. DIVIDE THE FILLING IN FOUR EQUAL PARTS. DISTRIBUTE 1/4 OF THE FILLING LENGHT WISE AND ROLL TIGHTLY. REPEAT THIS PROCESS FOUR TIMES .

11. USING AN 8 OR 9 INCH ROUND BAKING PAN, LINED WITH PARCHMENT PAPER . START SHAPING THE PIE IN A CIRCULAR MANNER UNTIL YOU UNITE ALL FOUR OF THE ROLLED PIECES.

12. LIGHTLY BEAT THE EGG AND BRUSH IT ON TOP OF THE PIE .
​
13. ADD THE EVERYTHING BAGEL SEASONING AND BAKE FOR 30-45 MIN OR UNTIL GOLDEN BROWN .
